Sage (Salvia officinalis), of the Lamiaceae (Labiatae) family. Woody-based evergreen subshrub clothed in grey down; native range: the northern Mediterranean coast and Balkan hills; grown in kitchen gardens the world over. Globally recognized as maryamiya (مريمية) in Arabic, and garden sage, common sage, true sage in English. The part used is leaf. Pebbled, grey-green velvety leaves breathing a warm, camphoraceous, resinous scent, with a bitter, astringent, faintly peppery taste.
