Almond (Prunus dulcis), of the Rosaceae family. Small deciduous tree of the rose family, blossoming pale pink before leaf, bearing a leathery drupe whose stone is the eaten kernel; native range: Western and Central Asia — Persia and the Levant to the Hindu Kush; cultivated around the Mediterranean since antiquity. Globally recognized as vataada in Sanskrit, badam in Hindi, lauz (لوز); badam (بادام) in Arabic, and sweet almond in English. The part used is the ripe sweet kernel (seed); and its expressed oil. A flattened, pointed kernel in a pitted woody shell, wrapped in a thin brown skin that slips off when soaked; ivory, dense and richly oily within, mild and sweet with a faint marzipan fragrance.
