Horseradish (Cochlearia armoracia), of the Brassicaceae (Cruciferae) family. Hardy perennial with large dock-like leaves from a long, thick taproot; native range: Southeastern Europe and western Asia; cultivated and naturalised across the temperate world. Globally recognized as fujl-e-turki (Turkish radish) in Arabic, and red cole, mountain radish, great raifort in English. The part used is root (fresh); leaves occasionally. The buff root is bland until scraped, when it looses a volatile, tear-drawing pungency sharper than mustard — a searing, penetrating heat that fades quickly on standing.
