Fresh butter (Bos taurus), of the Bovidae (Mammalia) family. The domestic cow — the milk churned to curd and the curd churned to butter; native range: wherever the cow is milked — the drug follows the churn, across India, central Asia and China. Globally recognized as navanīta, mṛkṣaṇa in Sanskrit, makkhan in Hindi, niu su (牛酥), su (酥) in Chinese, and butter, fresh butter in English. The part used is the fresh butter, unclarified and unsalted. A soft pale-yellow to near-white solid, smooth and cool, melting at blood heat to a clear oil; the taste sweet and faintly sour-fresh, the smell clean and creamy. Fresh butter carries buttermilk still within it, and turns rancid within days.
